Delicate rockfish head fillet, gently folded with roasted carrots, peas, shiso and crispy golden panko croquettes, on an aromatic lime and avocado cream, garnished with a tangy radish slaw, and finished with a spiced yuzu oil.
Succulent octopus tentacles, gently sautéed in white wine and garlic butter, on a bed of tender lime beans and sweet peppers, finished with chorizo crisps for a refined touch of smoky depth.
Delicate local red prawn carpaccio, on a silky almond mousse, infused with a fragrant citrus pesto, finished with a refined touch of lime mayo.
Thinly sliced seabass, cured in citrus and fresh herbs, on a smooth peach and ginger purée, with segments of blood orange, slices of jalapeño and candied ginger, garnished with dill frizzles
Marinated carrots, thinly sliced over a spiced almond and cumin hummus, topped with pickled mustard seeds and fresh chives.
